Since 1994, we have produced a spiced Holiday Ale every year for the Fall and Winter Holiday seasons. The current kit is based on a formulation we first perfected in 1999, and by popular demand, we have settled on this formulation ever since. A spiced honey brown ale, our Holiday Ale is spiced with orange peel, allspice and other spices. The spices balance the sweetness of the honey, and the resulting brown ale has a rich honey malt character and delicate bitterness.

Alcohol: 5.8%, IBU’s 35 Includes 9 lbs. of our blended malt extract and honey, mixed spices, flavoring hops, 125 ml of liquid ale yeast, and corn sugar for carbonation. Makes 5 gallons with a starting gravity of at least 1.058. Ease of Brewing: Beginner

My best brew

This beer is one of the best tasting that I brew. It is always a favorite with friends. By far the most requested.

This was a holiday favorite.

I love my dad and we've been brewing for years. This holiday he came to my house and weeks before I brewed this in time for his arrival. We polished off 2.5 gallons in two days. It was incredible and we LOVED it.

Great Tasting Beer

Made this beer according to the directions and it’s a great tasting beer for the holidays. Spices and honey blend nicely together and not overpowering at all. Only thing I’d suggest is make this at beginning of October because it needs some time for the spices to blend with honey and beer. I did 3 weeks primary, kegged and then another month later It was a tasty beer.

Not what I remembered

I have done this holiday ale in years past and have always liked it. This is not what I remembered, it is good but finished dry and not as sweet as I remembered. I don't know if they have changed the recipe or not. It is good but way dry for a holiday ale. I have always liked williams products but this one finished not as good as I remembered.

Seems like this beer surprises us with how good it is each year. We wouldn't want to drink it all year but the first one each season is like a renewed old friendship. We hope William's never stops producing it.

A: No, only extract with honey.

Q: Can I force carbonate this kit 36 hrs @ 30 psi and 36f without priming sugar or do I have to wait 9-14 days @ RT?

A: Yes, you can force carbonate or prime with sugar.

Q: Living in Florida I have to wait until late in the year to brew. I'll be brewing Fireside again and I know I can order it later..Always wanted to try "Holiday" but it's always out of stock later. How long can I store this in my fridge if I order now?

A: This kit will be available through mid-November, so it is better to wait until November instead of ordering it now. The malt and hops will last for months in the fridge, but the yeast will probably need to be replaced after a couple of months.
